Synthetic colours are cheap, powerful and remarkably consistent. They've been used for decades precisely because they work. But they're not what everyone wants anymore.

Blue is the awkward one

Walk into a modern cafe, gelato shop or bakery and you'll see menus built around ingredients people recognise: real fruit, matcha, turmeric, beetroot, butterfly pea, cacao, coconut.

Then someone wants to make something blue.

Nature gives us plenty of colour. Beetroot can give you red. Turmeric gives you yellow. Matcha and chlorophyll give you green. Carrot, paprika and annatto cover various shades of orange.

That changes the value of colour.

That's a useful question for a customer to ask.

Because the answer isn't simply food colouring.

It's blue because spirulina contains a naturally occurring pigment called phycocyanin, and that blue fraction can be extracted and used as a colour.

Suddenly the colour isn't decoration sitting on top of the product. It's part of the product's story.

That matters particularly for independent cafes, bars, bakeries and gelato shops, where one visually distinctive menu item can do considerably more work than another perfectly competent vanilla latte.

You don't need to turn it into a science lesson.

Blue spirulina is already an interesting enough answer.

And yes, people are moving away from synthetic colours

This isn't just an Instagram cafe phenomenon.

Across food and beverage, manufacturers have spent years reformulating products around colours sourced from plants, algae and other naturally derived materials as consumer preferences and retailer requirements have shifted.

That doesn't mean synthetic food colours are inherently unsafe or that every product needs to remove them.

There is a trade-off.

Synthetic dyes are exceptionally good at being dyes. They're concentrated, inexpensive, predictable and often tolerant of processing conditions that natural pigments don't particularly enjoy.

Blue spirulina behaves like a natural ingredient because it is one.

The recipe can affect the shade. Heat matters. Acidity matters. Different bases produce different blues.

If your only requirement is make this exact Pantone blue under almost any processing condition for the lowest possible cost, blue spirulina may not be the obvious answer.

But that's not why people choose it.

They choose it because they want the colour and they care where that colour came from.

It doesn't turn everything into spirulina flavour

This is another reason extracting the blue matters.

Whole green spirulina has a characteristic colour, flavour and aroma. That's perfectly fine when spirulina itself is meant to be part of the food.

It's considerably less useful when you're trying to make a vanilla gelato blue.

Blue spirulina uses the phycocyanin-rich extracted fraction instead. At the small amounts normally used for colouring, its flavour contribution can be subtle enough for the recipe to remain what it was supposed to be.

Your coconut lemonade should still taste like coconut and lemon.

Your vanilla soft serve should still taste like vanilla.

The blue gets people's attention. The recipe still has to earn the second bite.

It's particularly good at small, ridiculous ideas

Not every product needs a six-month innovation programme.

Sometimes a cafe wants a blue latte for summer.

A bar wants one striking zero-proof special.

A gelato shop wants a blue coconut flavour for the weekend.

A baker wants a cake that looks impossible without listing synthetic blue colour.
