Blue Smoothies & Bowls

A simple base for electric-blue smoothies and thick smoothie bowls. Keep the ingredients pale, get it properly cold, then pile whatever you like on top.

What you'll need

  • 1 small frozen banana
  • 150 ml coconut milk, oat milk or plain yogurt
  • 0.25-0.5 g blue spirulina
  • 10-15 ml honey, maple syrup or simple syrup, optional
  • 50 g ice, for a colder, thinner smoothie
  • Coconut flakes, granola or pale fruit, to finish

Making a bowl? Use a little less liquid and keep everything as cold as possible. For a drinkable smoothie, use the full 150 ml and add ice if you like.

Make it

  1. 1Blend the base. Add the frozen banana, milk or yogurt, sweetener and ice if using. Blend until completely smooth.
  2. 2Mix the blue. Stir the blue spirulina into a small splash of cold liquid until smooth.
  3. 3Make it blue. Add it to the blender and give everything another quick blend. Start with 0.25 g; add more if you want a stronger blue.
  4. 4Finish it. Pour into a cold glass or bowl and add coconut, granola, banana, dragon fruit or whatever else deserves to be on top.

The paler the smoothie, the better the blue

Banana, coconut, oat milk and plain or vanilla yogurt are easy starting points because they don't bring much colour of their own.

Once you start adding strongly coloured fruit, things get more interesting.

Pineapple and mango can push the blue towards tropical aqua. Berries will overwhelm it surprisingly quickly. Cocoa, coffee and dark nut butters aren't going to become blue no matter how optimistic you are.

That doesn't make them bad smoothie ingredients.

They're just bad places to show off blue.

Smoothie or bowl?

The recipe works as either.

For a smoothie, add enough liquid to get the consistency you want and serve it properly cold.

For a bowl, use less liquid and let the frozen banana do most of the work. Add your blue only once the base is smooth, then blend briefly until the colour is even.

And judge the finished bowl, not halfway through the blender. A thick frozen mixture will usually look softer than the same blue in a thin drink.

Try it with

Coconut banana

Frozen banana, coconut milk and a little vanilla. Probably the easiest way to get a clean, bright blue, and a good blank canvas for fruit, coconut and granola on top.

Pineapple coconut

Swap some of the banana for frozen pineapple. The yellow in the pineapple mixes with the blue and gives you a more tropical aqua colour. Lean into it.

Oat vanilla

Frozen banana, oat milk and vanilla syrup. Simple, creamy and particularly good if you're building a blue smoothie for a cafe menu rather than a breakfast bowl.

Making these for a cafe?

Don't build every smoothie from 0.25 g of powder during service. Once you've settled on your house base, make a larger blue batch and keep the ratio consistent. For 1 litre of a pale smoothie base, start with:

  • 1 L pale smoothie base
  • 1-2 g blue spirulina
  • Sweetener to your house recipe

Start at the lower end, blend it completely, and add more only if you want a stronger blue.

Once you've found the shade that works for your recipe, that's your ratio.
