Blue Vanilla Soft Serve

An eggless vanilla soft serve that gives the blue a pale base to work with.

Blue Vanilla Soft Serve

This is an eggless sweet-cream base, so there is no yellow custard fighting the blue. It is best straight from the machine, while the texture is still soft.

What you'll need

  • 450 ml whole milk
  • 300 ml whipping cream
  • 120 g caster sugar
  • 25 g glucose syrup or light corn syrup
  • 1 tsp vanilla extract
  • 1/4 tsp fine salt
  • 1-1.5 g blue spirulina

Dark vanilla extract can dull the colour slightly. It won't ruin the batch, but a clear extract keeps the blue brighter.

Make it

  1. 1Combine the milk, cream, sugar, glucose, vanilla, and salt in a saucepan. Warm gently, stirring, just until the sugar dissolves. Do not boil.
  2. 2Cool the base, cover, and refrigerate for at least 4 hours or until completely cold.
  3. 3Blend 1 g blue spirulina into a small cup of the chilled base until smooth, then whisk it back into the full batch. Add the remaining 0.5 g only if you want a deeper blue.
  4. 4Churn according to your machine instructions. Serve immediately for soft serve, or freeze for 30-45 minutes if it needs a little more body.

Judge the colour after churning

The churned soft serve will look paler than the liquid base. Aim a shade darker before it goes into the machine.

If the first gram isn't enough, add the remaining half gram. Beyond that, extra powder is more likely to affect the flavour than rescue the colour.

Try it with

Malted vanilla

Whisk 20 g malted milk powder into the warm dairy base before chilling.

Blue ripple

Keep half the base white and alternate both colours as you dispense or scoop.

Affogato

Serve a small blue swirl with espresso poured around, rather than over, the ice cream.
